BEST EVER SUGAR COOKIES
From Janice
I'd like to share this recipe again with everyone. I called it in for Christmas, in honor of The Cookie Lady. Here it is. It's easy, and adaptable to anything you'd like to add to it, nuts, raisins, etc.
2/3 cup vegetable oil (I like to
use corn oil for the taste of it)
3/4 cup granulated sugar
2 eggs
2 cups flour
2 teaspoons baking powder
1 teaspoon vanilla
Mix the oil and the sugar . Add
eggs and vanilla. Mix well. Add the flour and baking powder.
Drop by teaspoons onto a greased
cookie sheet. Bake at 350* for about 7 min. Remove from the cookie sheet
immediately.
This is a great recipe if you have issues with your
hands, such as arthritis. It mixes up so easily! One-Two-Three! You may add
chocolate chips, or nuts, or raisins; you can change the flavoring, also. Almond
is especially good. Also, if you like a crisper cookie, flatten each teaspoonful
of batter with a glass dipped in sugar or cinnamon sugar. I have a crystal glass
with a star pattern on the bottom and they make a fancier cookie, party-wise. Or
just sprinkle cinnamon sugar on them after you drop them onto the cookie sheet.
This is the most popular way, I've found out, and get the most compliments. But
my favorite is topped with my Mom's chocolate icing.
I hope everyone likes these as much as we do. Happy eating!
