HAWAIIAN LUAU CAKE
1 white cake mix
4 eggs
1/2 cup oil
1 can mandarin oranges, including juice
1 can crushed pineapple(drain juice and
reserve)
1 pkg instant vanilla pudding
1 1/2 cups milk or less
1- 8oz. Whipped topping
Pecans if desired.
Combine cake mix, eggs,oil and mandarin oranges
and juice in a large bowl. Blend on low speed for 2 min. Pour into 9x12 cake
pan and bake at 350 for 35 min.
Drain the pineapple and save the juice.When the
cake is cooled, poke holes in it and pour the pineapple juice evenly over
the cake. Mix pudding and milk until thick. Add pineapple and the whipped
topping to pudding and blend together. Frost cake with the pudding mixture.
Top cake with pecans If desired.
