May's Potato Soup Recipe
From May MacNeil, Inverness, Nova Scotia

3 potatoes
1 quart milk
2 slices onion
3 tablespoons butter
2 tablespoons flour
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon parsley

Cook potatoes and then mash them. Scald the milk with the onion. Then add this to mashed potatoes, mix well. Melt butter, add flower, salt and pepper to butter and then add this to the milk and potatoes. Cook one minute and then sprinkle with parsley.
