Karen's Potato Soup Recipe (Grandmother's recipe)

  4 medium potatoes, peeled
  1 medium onion, peeled
  Few sprigs celery or parsley
  3 quarts water
  1 teaspoon red pepper
  2 tablespoons salt
  2 tablespoons butter

Dice or cut onion, potatoes, brown onion in butter until light brown. Add flour and brown a little. Add the potatoes and pepper, mix well. Add the water, chopped celery or parsley and salt. Boil until the potatoes are cooked and soft.

  Grated Noodles
  1 1/2 cups flour
  2 whole egg
  1/2 cup water

Mix to make a noodle dough. Grate this dough and add to potato soup. Let boil in soup for 2 or 3 minutes, or until grated noodles are cooked. Cool.

Also for the crackers, 1 large cream cheese, 1 can of Underwood chicken spread, salt, pepper, diced onion flakes, mix. This can also be made into a ball, and rolled in nuts. It is great to take to parties and easy to make. Enjoy!
