2 hours before cooking, shred
zucchini in small pieces on a cheese-grater
Salt liberally
Squeeze out all the water
Make a batter using 2 eggs, flour,
lots of cheese (grated Parmesan). Add basil and parsley. Make batter into
consistency of pancake batter.
Pat in the grated zucchini
Cook in skillet with oil
